Query:
When doing breaths in a posture and one feels that Kundalini is about to arouse, at that point do you immediately stop the breathing and apply all the locks? or does one continue doing the breaths to make the charge even more intense?

If you are not expert at controlling the way kundalini rises, and if you know that, then you assume a humble attitude which means that you stop and apply the locks, keeping your attention on kundalini, making sure that you are not in a position where if the physical body falls, it will be damaged or hurt in any way.
This means you apply the locks tight, you gradually assume a low posture where if you lose control of the body and it falls or bends forward or backward, it won’t come to any harm.
It is very important that as you move to a low position, you do not release the locks. What usually happens is that when kundalini strikes the student is caught off guard and cannot apply the locks. Cannot is important because it means that the student is caught off guard in such a way the he or she no longer has the power to apply the locks. And that means that kundalini will travel any which way it likes, which will cause the physical body to fall to the ground.
This should be prevented by paying attention, holding the locks tight, getting down to a lower position while holding the locks (without releasing them even for a second).

If you are expert and has repeatedly gone to this point and was able to control kundalini so that it did not cause you to lose control of the physical body, then you would first check the locks, then moments after you would look to see where kundalini is and you would continue the infusion if you feel that you can take in a higher charge of energy.
You have to have developed an intuitive sense about this. If kundalini came up all through the spine and is in the head already, it is best to apply the locks while you keep track of kundalini’s movements and at the same time allow kundalini to subside or fizz out and then continue the session.
Better to be safe than sorry. Better to let kundalini rise a little at a time and gain control over each phase.

Query:
My real question is, if after every posture we hold the breath in and do the locks, won't the energy disperse and flow up the energy through the system due the locks and "kill" the charge down the trunk (if any) to arouse Kundalini? Avoiding this way for the charge to get any bigger?

Let me ask you this question:
If you are putting air into a tire, and it has a very good check valve, will the air not escape from the tire?
My point is that if you are applying the locks properly, then the charge of energy will be retained in the system and it will not leave the system. It will become more and more compressed into the system which will cause kundalini arousal in a bigger way eventually when kundalini is inspired to move.
If the locks are not applied efficiently, that is like having a faulty check valve which means that you will spend all day pumping air into the tire but the air will be escaping and the tire will never reach the required firmness (psi).
If you are actually applying the locks, each time you do a breath session in a specific posture, then there will be an additional charge. Say like when you are charging a battery. After 15 minutes it might hold say about a 30 amp discharge energy. Then after a total of 30 minutes it holds 60 amp discharge energy.
But if the infused breath energy discharges up the spine, then that is okay. That is the idea. So say that you did hold the locks efficiently and you hold a charge where kundalini moved up the spine say to the lower neck so that was discharged for sure, I agree. But then it was not just a discharge it was a guided discharge because of the locks. It means that it paid off by clearing out the sushumna central passage up to the lower neck. So now you have zero charge but you have the benefit of a blasted out clear passage from base chakra to the lower neck.
Then you begin breathing rapidly again. You build up another charge. Then when kundalini moves that second time, it will quickly go through the spine to the lower neck in a flash because all the resistance which was there was blasted out by the first charge. So now this second charge will penetrate through the neck into the brain. This is where doing bhastrika pranayama beats the process of visualizing that the sushumna will be cleared. It actually becomes cleared by the breath energy, something which your imagination only pretend to achieve.
So that is what happens.
Now if you did not hold the locks that first charge would diffuse through the belly area as heat force, or through the sex area a sex energy charge or through the base chakra as survival evacuation energy. And that is no good.
